You might think that a professional chef would have the ultimate in tricked-out kitchens at home. But when Joseph Gillard, chef at Napa Valley Grille in Westwood Village, cooks for family and friends, it’s in a decidedly un-sleek space centered around a vintage O’Keefe and Merritt stove. No stainless steel laboratory, it just feels like home, says Mary MacVean.

Even a pan that’s engraved on the bottom to mark his time as executive chef at Nick & Stef’s downtown has been used. A lot. Then there’s his 50-year-old, 12-inch Griswold cast-iron frying pan — a family heirloom.
