Mozza’s Chad Colby is one of four chefs who will be participating in a special whole hog dinner Sept. 17 at the Farmstead restaurant at Napa’s Long Meadow Ranch as part of the James Beard Foundation’s celebrity chef tour. Colby, who teaches classes on butchery and hosts his own Saturday night whole hog dinners at Mozza2Go, will be joined by John Currence of City Grocery in Oxford, Miss.; Michael Sullivan of Blackberry Farm in Walland, Tenn.; and host chef Stephen Barber from Farmstead. [UPDATED, 1:13 P.M.: The story originally said the whole hog dinners at Mozza were Friday nights). Tickets are $175 and are available at the Long Meadow Ranch website. Proceeds will go to the James Beard Foundation.
