Did you know that July is National Ice Cream Month? And that today is Creative Ice Cream Flavor Day? (Personally, I think ‘Creative Ice Cream Flavor Day’ is a clunky name for a holiday, but no one asked me.)

Given such momentous milestones in culinary history, combined with our desire to deliver you a no-bake dessert recipe for each day of the summer, I combed the L.A. Times Test Kitchen’s recipe archives for unusual ice cream flavors, such as beer ice cream and buckwheat ice cream.

But I didn’t stop there. I rounded up cucumber-chile and blueberry-lavender ice pops. A palate-cleansing Parmesan(!) gelato, at left, a semifreddo, a yogurt ... you get the idea.
