Cole’s says it will officially open next month by celebrating the 100th anniversary of the ‘originator of the French dip’ with a fundraising event benefiting the Los Angeles Conservancy on Dec. 4.

On Dec. 6., samples of French dip sandwiches, sides and pies will be ‘100 cents apiece’ from noon to 4 p.m. (A soft opening is scheduled for the last week of November.)

The $1.6-million restoration of the 1908 ‘public house,’ located in downtown’s Pacific Electric Building at 6th and Main, includes original glass lighting, penny-tile floors, Tiffany glass panels, transom windows and a mahogany bar. The launch menu will feature French dip sandwiches (pork, turkey, lamb or beef, with beef au jus), a choice of artisan cheeses and Cole’s custom mustard, served on hot French rolls, with potato salad and coleslaw. Neal Fraser is consulting chef, and Michael Dinon is executive chef.

Sasha Petraske and Eric Alperin are consulting on the cocktail menu and ‘specialty cocktail service.’ Eater L.A. reported last month that ‘Petraske and Alperin have partnered with [Cole’s owner] Cedd Moses to open a ‘backroom’ speakeasy at Cole’s.’

The ‘Cole’s 100 Premier Party’ is set for Dec. 4, and will feature a ‘classic cocktails soiree’ with French dip sandwiches, live jazz and DJs. Tickets are $50 per person and go on sale Thursday. See www.laconservancy.org for additional info. (After 9:30 p.m., entrance is $25 per person.) Guests are encouraged to dress the part, i.e. come as your favorite flapper, gangster or silent film star.
