Nova scienceNOW: In this new episode researchers demonstrate animals are smarter than most of us think (8 p.m. KOCE).

Human Target: Chance’s (Mark Valley) investigation into the past of Ilsa’s (Indira Varmi) husband reveals a web of deception that could destroy the team forever in the season finale (9 p.m. Fox).

NOVA: David Pogue concludes his four-episode run with an hour devoted to “Making Stuff: Smarter,” which in this case includes an army tanker truck that heals its own bullet “wounds,” an airplane wing that changes shape as it flies and even clothing that monitors a person’s heart rate (9 p.m. KOCE).

Mr. Sunshine: Matthew Perry stars as the manager of a San Diego sports arena in this new series (9:30 p.m. ABC).

Top Chef: The contestants appear on Jimmy Fallon’s late-night talk show, then catering the star’s birthday party, where Fallon also serves as a guest judge in this new episode (10 p.m. Bravo).
