Dallas souffle restaurant hopes to be next big thing

Hedda Dowd and Cherif Brahmi opened their souffle restaurant, Rise, at Inwood Village on Lovers Lane in Dallas three years ago to glowing local reviews and a steady clientele.

They serve entree and dessert souffles, along with salads and other dishes. I went there for lunch Saturday while attending the annual meeting - in Dallas - of the Society of American Business Editors and Writers. I had an artichoke and Brie souffle, and my friend had a crab souffle. According to the menu, the souffles have between 200 and 450 calories. The restaurant is designed to be environmentally conscious, with re-used glass bottles for water, cloth napkins and tables crafted from recycled concrete.

The restaurant’s owners have published a cookbook, called Rise to the Occasion, which features souffle recipes, some history of French cooking, and a lot of photographs. They are planning to open locations in other parts of Texas soon, and may look to franchise in other parts of the country, including the Bay Area in California.
