Yes, Christmas is just around the corner. But you've still got time to bake some holiday sweets. Your recipe for the day has the politically correct title of Gingerbread people. But what we really love about this recipe from the L.A. Times Test Kitchen is that the dough must chill for at least two hours -- and up to one week. That means that if you plan accordingly, you can have freshly baked gingerbread through the holiday.

Your L.A. Times Test Kitchen recipe for the day: Three-bean and hominy chili

Let's see. It's cold and rainy here in L.A. It's Monday (which means half of you are starting a diet, or looking for Meatless Monday options, or both). And we're in the midst of the #unprocessed October challenge (see note below).

Well, I think I have something to make everyone happy.

Your L.A. times Test Kitchen recipe for the day is three-bean and hominy chili. Our Test Kitchen manager, Noelle Carter, says you won't miss the meat. And check out the calorie count on this dish -- you'll want to make a big batch so you can have plenty of leftovers. (That's my single favorite reason for choosing a recipe.)

Note: You'll notice the recipe calls for canned tomatoes and beans. Andrew Wilder over at Eating Rules says this still qualifies for the #unprocessed October challenge because you could, technically, can your own tomatoes and beans. However, feel free to use dried beans and homegrown canned tomatoes to hew closer to the challenge guidelines. And if you are buying canned goods, be sure to check the labels: You want to avoid additives.
