Test Kitchen tips: Soak steel cut oatmeal before cooking
You love the flavor and texture of steel cut oats, but don't want to spend the extra half hour or so it takes to cook them in the morning. With a little planning, you can cook your steel cut oats in about the same time it takes to whip up a batch of rolled oatmeal. The trick? Soaking.
Soak the steel cut oats in water (4 parts water to 1 part oatmeal) in a covered container or saucepan the night before you plan to cook. The next morning, the oats will be softened and will cook in a fraction of the normal time.
