A taco truck ... in Minnesota?
Take that, Roy Choi! Cross-cultural fusion tacos served from food trucks? Turns out it may not have been a Los Angeles invention after all. Consider the OOf-da Tacos truck, spotted in Crookston, Minn., while I was driving through the northern part of the state on vacation (I know, odd choice).
According to its website, OOF-da Tacos was founded in 1982. Though originally it seems to have been satisfied mostly with appearing at town celebrations and county and state fairs, there are now three trucks circling the northern Minnesota area.
Sadly, though the name sent visions of lutefisk tacos dancing in our heads, the reality is not nearly as experimental: The OOf-da taco is basically what is called fry-bread tacos in New Mexico -- a puffy flat of fry bread topped with ground beef, shredded cheese and iceberg lettuce and canned black olives.
Kogi has nothing to worry about. But, according to the website, franchises are available.
