You had questions: Thomas Keller has the answers

Those of you who visited our Facebook page with questions for chef Thomas Keller last week, the answers are in. Thanks to everyone who contributed, the questions were really terrific, covering a wide range of topics including his favorite foods (hint: roast chicken and lemon tart are two of them), timing for tempering meat, reconstituting dried mushrooms and the ins and outs of home sous-vide equipment.
