The Project: La Golondrina's orange-infused flan
Each Friday, we post a recipe from the L.A. Times Test Kitchen's archives that's perfect for weekend cooking. This week: the orange-infused flan on the menu at Casa La Golondrina Cafe on Olvera Street in downtown L.A. Why is this recipe so special? Times Test Kitchen manager Noelle Carter explains:
This recipe, from the L.A. Mexican restaurant established in 1924, combines a silky, rich custard base sweetened with condensed and evaporated milks. The subtle hints of vanilla and amaretto pair perfectly with the orange-infused caramel topping.

If you are planning a Cinco de Mayo fiesta, this would be the perfect finish. (And here are 23 other menu suggestions from the L.A. Times Test Kitchen. Yes, there's a margarita recipe.)
