Public Kitchen & Bar opens at the Roosevelt in Hollywood

Public Kitchen & Bar opens today at the Hollywood Roosevelt Hotel in the ground floor space that once housed Dakota steakhouse, back when restaurateurs Tim and Liza Goodell first went Hollywood (remember black leather tablecloths?).

The Goodells (of the erstwhile Aubergine, Meson G and Red Pearl Kitchen) also run 25 Degrees in the Roosevelt and with Public Kitchen & Bar have what Thompson Hotel Group co-owner Jason Pomeranc says ‘should have always been the restaurant at the Hollywood Roosevelt.’

No more Caesar salads served tableside or thick steaks (except for a cote de boeuf for two). Instead, Tim Goodell, who is president and executive chef of Domaine Restaurants, has created an American menu with food that he says he would cook for friends and family, much of it priced under $30. There is chicken liver terrine with kumquat marmalade and grilled bread; gnudi with brown butter, chanterelles and bacon; crispy oxtail galette with poached egg; and Duroc pork Schnitzel with arugula salad. A cured meat and cheese bar, which extends into the hotel lobby, will also offer oysters and shared plates.
