The Project: Duck and okra gumbo

GumboEach Friday we choose a recipe from the L.A. Times' Test Kitchen archives that's perfect for weekend cooking -- when you have a little more time on your hands.

This gumbo will take about three hours to make. But before you say "Who's got the time?" know that much of that is hands-off cooking.

So you can get some chores done around the house and you'll be rewarded with a rich, hearty meal when you're done.
