I always extract ALL FLAVOURS from the carcass to build a great stock, which is used for the Classic Turkey & Sausage Gumbo... also the bits of meat & giblet gravy leftover can be enjoyed in a Turkey Pot Pie (i use Croissant pastry for that buttery flavour)... always experiment with New Veggies... Daikon, Jerusalem Artichokes & Fennel add a new twist to an old classic...

I made a Sweet and Spicy Turkey Curry Soup with Wild Rice using our leftovers from Thanksgiving.

Turkey Enchiladas - lightly grease a large oval or rectangular glass or porcelain casserole dish. Quickly heat each individual hand-made style white corn tortilla in a non-stick skillet. Fill with chunked cooked turkey, a coupole of spoons of drained black beans, a little Veronica's fresh mild salsa, a few drops of Bufalo chipotle sauce, some chops of green onion tops and bottoms, and some cheese (I used little bits of garlic herb Sonoma cheese), then roll up the enchiladas next to each other in the casserole dish until it's filled. Mix one small can tomato sauce with the remaining salsa, add 1/2 tsp. cumin, 1/2 tsp. each dried oregano and basil, 2 finely chopped garlic cloves and a sprinkle of Spanish smoked paprika, then cover the enchiladas with the sauce. Sprinkle with the grated cheese of your choice -- pepper jack, cheddar or a mix --- and a light dusting of paprika. Bake in a 350 oven until the cheese bubbles and it browns a bit.

I packed up leftovers in the compartmentalized disposable container into individual Thanksgiving meals and handed them all off to everyone else.

We are left with just enough stuffing, gravy, and green beans salad to accompany anything else for just a few more meals.
