We love mushrooms in our family! You can't go wrong with quick and easy Mexican for a kid friendly dinner. Make sure to pair it with a nice green salad for a balanced meal . I enjoy meatless Mondays (and other days as well) because it feels better emotionally not eating meat and doing our part to help improve our environment. It is nice that meatless Monday is always easy for me to prepare a kosher version for my kosher home. Thanks!
