Settle down, class!

As we bid farewell to summer and embrace the start of the school year, Thursday's L.A. Times Food section takes you behind the scenes of a culinary boot camp for lunch ladies (and lunch men), introduces you to the chefs of the future -- upstarts who are working in some of the hottest celebrity kitchens in L.A. -- and asks the question: Whatever happened to home ec?
