I MAKE HOMEMADE ICE CREAM ALL THE TIME, BECAUSE I ENTERTAIN AT HOME. I MAKE A CUSTARD----FOR EVERY THREE CUPS OF FLUID (i.e. milk, cream and fruit juices or tea) I ADD TWO EGG YOLKS , ONE WHOLE EGG AND AN EGG WHITE. MIX IN A DOUBLE BOILER OVER SIMMERING WATER, UNTIL A MODERATE AMOUNT OF RESISTANCE IS SENSED, OR UNTIL THE MIXTURE COATS A METAL SPOON. REMOVE FROM HEAT; COOL TO ROOM TEMPERATURE, THEN ADD FLAVOR ESSENCES. CHILL IN THE REFRIGERATOR, THEN PROCESS IN YOUR FAVORITE MACHINE!
