Petrossian now pouring vodka with its caviar

Petrossian just acquired a provisional liquor license, which means that Chef Benjamin Bailly’s caviar-centric cuisine can now be enjoyed with the traditional drink of choice: vodka. In addition to distilled palate cleansers sold by the flute (Linie Aquavit, Jean Marc XO, Belvedere, Russian Standard Premium and Chopin are some on offer), the restaurant is also shaking up caviar-tinis made with vodka, dry vermouth, a caviar-stuffed olive, cocktail onion and a cube of pressed caviar for $18.

Be sure to shine your little pearl spoons because Petrossian also plans on doing vodka/caviar flights and pairings in the near future.
