Spring means we are one step closer to summer and sun-ripened nectarines. It also means it’s time to fall in love all over again with artichokes, fresh plump asparagus and dishes that celebrate that the spirit of renewal, reawakening and rebirth. (And nothing does that better than eggs.)

How about serving this showstopper of a dessert -- chocolate meringue layer cake -- at a spring brunch. Or a spring dinner party. Or a Tuesday night when you’re in the mood for c-h-o-c-o-l-a-t-e.

Check out this photo gallery for the recipe, as well as 21 other springtime recipes from the L.A. Times’ Test Kitchen. Get hopping! (And wait until you see the coconut cake--definitely a test kitchen favorite. But is it the ‘ultimate?’ Either way, it’s YUM!)
