As a microbiologist and a baker. Bread is not to be refrigerated - same as these steamed rice noodles.
One takes probiotics to promote internal health because Americans are way too protected ; that is why when they travel internationally, they need protection.
The food police need to study up cosmopolitan gastric diseases and will discover that bacterial fermentation is good for ya. Think. Beer, wine, and cheese.
