Chef changes at Anisette and Palihouse

Anisette has a new chef de cuisine: Josh Smith took over the helm from Brendan Collins on Saturday. Collins, who worked at Melisse before teaming up with Alain Giraud at Anisette, is the new executive chef at The Hall, the brasserie at Palihouse Holloway. He’ll also be exec chef at a second Palihouse restaurant on Vine in Hollywood, set to open in the spring. According to Collins, he loved working with Giraud but couldn’t pass up the offer. Smith, who was making the rounds at the Wednesday Santa Monica farmers market with Giraud, started work Saturday. Before that, the self-taught chef (and Vegas native) spent four years with Michael Mina at his Las Vegas restaurant Seablue.
