At 8 oz. Burger Bar less is more

On a recent visit to Govind Armstrong’s new gourmet burger restaurant, 8 oz. Burger Bar, which is located in the former digs of Table 8, I was surprised when my waiter told me not to order any extras, sauces or cheese on my Estancia grass-fed burger. These add-ons cost between $1 and $2 each and are prominently featured on the right side of the menu. They include mouthwatering and unusual options like purple mustard, Bel Paese cheese, green peppercorn aioli, fried caper tartar sauce and red onion marmalade. I was ready to customize up a storm, adding at least $6 to my $9 burger bill when my waiter interrupted me asking if I’d ever been to 8 oz. before and explaining that the burgers were best experienced in the raw, so to speak, before being dressed up in additional flavors (besides what already comes with them on the menu).

‘These aren’t burgers like you’ve tasted before and we recommend that you start slow,’ he said, adding that next time I come back I can decide whether or not to tack on the bells and whistles.

When my food came fifteen minutes later I was glad I didn’t drown out the earthy flavor of my meat. But I did wish I had ordered some cheese.
